Lemon Dessert

3 eggs

½ cup sugar

¼ cup lemon juice

2 tablespoons of sugar

A pinch of salt

½ pint heavy whipping cream

Vanilla Wafers (crushed)

 

Prepare a pan by lining the bottom with crushed vanilla wafers (save a portion to add to the top)

Combine 3 egg yolks, sugar, and lemon juice in a double boiler.  Cook until thick, stirring constantly. Set aside to cool.

Beat 3 egg whites until stiff. Add 2 tablespoons of sugar and a pinch of salt. Fold into cooled lemon mixture.

Fold in a ½ pint heavy whipping cream.

Pour mixture into prepared pan on top of crushed vanilla wafers, top with remaining vanilla wafer crumbs.

Chill in the freezer for 24 hours.
