Banana Bread

½ cup canola oil

1 cup sugar

2 beaten eggs

3 ripe bananas (beaten)

2 cups whole

wheat flour

1 teaspoon baking soda mixed with 3 tablespoons cold water

1 teaspoon vanilla extract

 

Cream oil and sugar until very light. Add beaten eggs and bananas. Sift flour and add to mixture. Add baking soda and vanilla. Bake in a 9×5 inch loaf pan that has been greased and floured at 325 degrees for 1 hour. Test for doneness.
