Split Pea Soup

Ingredients

1 lb bag of split peas

3 quarts (12 cups) water

1 large onion minced

1 cup diced carrots

1 cup diced celery

3 bay leaves

1 tablespoon lemon juice

1 teaspoon salt

1/16 teaspoon pepper

1 teaspoon ginger

½ to 2 lbs ham hock (if desired)

 

Directions

Put all ingredients into a very large pot. Bring to a boil, then simmer for 3 hours

Put into a blender, small amounts at a time, Puree.
